Passionfruit cookies

You must try these passion fruit cookies. They are light and airy yet have a crunchy texture because of the real passion fruit pulp they contain.

Perfect for Sunday afternoon get-together with friends, dunk into coffee or tea or simply enjoyed whenever.

These cookies are vegan, nut-free and “oh so delicious.”


Here is the recipe:

Yield: about 12- 16 cookies


  • 160 grams of powder sugar + 4 tablespoons for dusting

  • 60 grams vegan butter (I used Violife)

  • Pulp of 6 medium sized passion fruits

  • 225 grams all-purpose flour

  • ½ teaspoon fine sea salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda


Method

Grease two cookie sheets with parchment paper and preheat oven to 350F/180C.

Use a handheld mixer or stand mixer, whisk the vegan butter with the powder sugar until smooth.

Add the passion fruit pulp and whisk until combined.

In a separate bowl, mix the flour, baking soda, and baking powder and sea salt until well combined.

Pour the wet ingredients to the flour mixture and combine to a smooth batter.

If the dough is too sticky, add a little more flour, if too dry add a tablespoon of vegan milk.

Use an ice cream scooper and scoop batter out and roll it into a ball using your hands, then roll it in the extra powder sugar, set aside.

Continue with the remaining dough.

Let the cookies set for a few minutes and roll again into the powder sugar and place them into the cookie sheet.

Bake for 12 minutes, take out and leave completely to cool.
